Lunch! I ran out of spinach today, which is my go-to ingredient for everything, so I had to get a little more creative and I came up with this :
brown rice with black beans, red & orange bell peppers, fresh jalapeno, white onion, garlic, cilantro and lime
This is also great with a bit of plain Greek yogurt and a sprinkle of nutritional yeast if you aren’t vegan.
