Making brown rice cooked in a vegetable broth with black beans, spinach and sweet peppers for lunch. Also put together a fresh pitcher of cucumber-lemon water. It’s going to be almost 90 degrees today. Summer is coming quickly.

avocado & red onion sandwiches (with mustard, because I love mustard)

sweet potatoes baked with olive oil, parsley, garlic and a bit of sea salt with a dip made from avocado, plain greek yogurt and cayenne pepper

a big side salad consisting of spinach, carrots, snap peas and balsamic vinaigrette 

and a jar of freshly brewed jasmine green tea with honey on ice
